Easy Peasy Lemon Cake
Ingredients

170 g (6 oz) S/R Flour

170 g (6oz) Castor Sugar

113 g (4oz) Margarine
-
2 Eggs
-
4 Tablespoons Milk
-
Rind of one lemon- grated
For the sauce
-
2 Tablespoons sugar
-
Juice of one lemon
Method
Pour all the ingredients into a bowl and mix together.
Put into a greased 2lb loaf tin.
Bake in a moderate oven for 50 minutes.
Pour over sauce while still hot.
Leave in tin to cool.
