Easy Peasy Lemon Cake
  • 170 g (6 oz) S/R Flour
  • 170 g (6oz) Castor Sugar
  • 113 g (4oz) Margarine
  • 2 Eggs
  • 4 Tablespoons Milk
  • Rind of one lemon- grated

For the sauce
  • 2 Tablespoons sugar
  • Juice of one lemon


Pour all the ingredients into a bowl and mix together.
Put into a greased 2lb loaf tin.
Bake in a moderate oven for 50 minutes.
Pour over sauce while still hot.
Leave in tin to cool.
